Shannon Kaylee Wolcott Mosley
Instructor. I have been in Oregon since the early 90’s, I am originally from Upstate New York where I am a 14th generation Wolcott (Somerset, England). Growing up my family had cider get-together where they would make cider together. Living in the Willamette Valley I have had great access to amazing wine, and got to see the craft beer industry blossom. In 2014, I decided to start home-brewing cider to see if I could make something interesting. The fist cider I made was a Blueberry cider at 10% abv, it was super dry and delicious. I decided to start ^5 cider while I was attending school full time at PSU. My husband and I came up with the name ^5 cider (hi five cider) after shooting down other names. I looked our Australian Shepard and asked her to do a high five and it’s like a light bulb turned on, we knew we had our name. That was the start of our yearlong journey of starting up our cidery. I went through PSU's Business of Craft Brewing classes to get an understanding of how to go about starting and running an alcohol business. Now that we are up and running I make cider and my husband sells it. Keeping ingredients pure is important to me, I don’t want to use artificial chemical things. My juice is real juice, not from concentrate. I use a juice that is mainly made from desert apples because my main product is a fruit cider. My favorite thing to do is to play with flavors by adding other fruits into primary fermentation and see what interesting combinations I can come up with. Our cider is sold and distributed by us in Oregon and Washington, then we use a distributer for our Japan sales.
I have made cider down at Wandering Aengus / Anthem in Salem as a Part Time on call cider maker. This experience enabled me to work on large equipment and large batches.
Currently I am a distiller at McMenamins Edgefield. I am leaning whiskey, rum, brandy, and gin production.

Jennifer Nolfi
Instructor. Jennifer Nolfi is an experienced business professional who brings a unique blend of work in both the public and private sectors. She has extensive ties to the region and Oregon's business community. One of Jennifer’s greatest strengths is her ability to weave together ideas, people, and resources to form partnerships and bring programs to life.
Jennifer recently joined PSU as the Director of the Athletic & Outdoor (A&O) Industry Program. Prior to joining PSU, she served as the Director for Partnership Development at Looptworks, a design firm that uses excess premium materials to craft limited edition clothing and accessories. There Jennifer gained experience in taking a product from ideation to market and working with partner brands to reduce their waste stream. Before that, Jennifer spent 12 years working for the Portland Development Commission. She counts among her key accomplishments: spearheading a public-private research partnership that culminated in the very first comprehensive market sizing study of the A&O Industry; an action plan to position Oregon as a leader in this space; and providing a platform for PSU to launch a program focused on the A&O industry. Jennifer served on the PSU Athletic & Outdoor Advisory Board and continues to be active with SYNQ Consulting.

Jay Gopalakrishnan: Simulate right - Use mathematics
The success of scientific computation in recent decades in the design and prediction of complex engineering and biological systems has elevated it into a scientific methodology distinct from the traditional theoretical and experimental methodologies. Dr. Gopalakrishnan argues that the key to this success has been numerical algorithms founded on sound mathematical principles. This opinion shapes his research attitudes.
